Simple Garlic & Herb Lion’s Mane Mushrooms

A quick, delicious plant-based recipe

Lion’s Mane mushrooms are loved for their unique texture and mild, savoury flavour — often compared to seafood or tender chicken. This simple garlic and herb recipe is one of our favourites and a great introduction if you’re new to cooking gourmet mushrooms.

Ingredients (Serves 2)

  • 200g fresh Lion’s Mane mushrooms
  • 1 tbsp olive oil or butter (plant-based if vegan)
  • 2 cloves garlic (finely chopped)
  • Fresh thyme or parsley
  • Salt & black pepper to taste
  • Optional: squeeze of lemon or soy sauce

Method

  1. Prepare the mushrooms
    Gently brush off dirt and tear the Lion’s Mane into bite-sized pieces.

  2. Heat the pan
    Add olive oil or butter to a pan over medium heat.

  3. Cook the mushrooms
    Add the mushrooms and cook for 5–7 minutes, allowing them to brown and release moisture.

  4. Add garlic & herbs
    Stir in the garlic and herbs and cook for another 1–2 minutes until fragrant.

  5. Season & serve
    Season with salt and pepper. Finish with lemon juice or soy sauce if desired.
