Simple Garlic & Thyme Grey Oyster Mushrooms

Grey oyster mushrooms are one of the most versatile and flavour-packed varieties. With their delicate texture and subtle umami flavour, they absorb herbs and garlic beautifully, making them perfect for a quick, satisfying dish.

This simple recipe brings out their natural richness with just a handful of ingredients.

Ingredients (Serves 2)

  • 250g fresh grey oyster mushrooms
  • 2 cloves garlic, finely sliced
  • 1 tablespoon olive oil or butter
  • Few sprigs fresh thyme (or ½ tsp dried thyme)
  • Salt & freshly cracked black pepper
  • Optional: squeeze of lemon or splash of white wine

Method

  1. Prepare the mushrooms
    Gently brush or wipe the mushrooms clean and tear larger clusters into bite-sized pieces. Oyster mushrooms are best torn rather than cut.

  2. Heat the pan
    Heat a wide frying pan over medium-high heat and add the olive oil or butter.

  3. Cook the mushrooms
    Add the mushrooms in a single layer. Let them cook undisturbed for 2–3 minutes to develop golden edges before stirring.

  4. Add garlic & thyme
    Reduce heat slightly, add the sliced garlic and thyme, and cook for another 1–2 minutes until fragrant. Avoid browning the garlic.

  5. Season & finish
    Season with salt and pepper to taste. Finish with a squeeze of lemon or a small splash of white wine if desired.

  6. Serve immediately
