Simple Garlic & Thyme Grey Oyster Mushrooms
Grey oyster mushrooms are one of the most versatile and flavour-packed varieties. With their delicate texture and subtle umami flavour, they absorb herbs and garlic beautifully, making them perfect for a quick, satisfying dish.
This simple recipe brings out their natural richness with just a handful of ingredients.
Ingredients (Serves 2)
- 250g fresh grey oyster mushrooms
- 2 cloves garlic, finely sliced
- 1 tablespoon olive oil or butter
- Few sprigs fresh thyme (or ½ tsp dried thyme)
- Salt & freshly cracked black pepper
- Optional: squeeze of lemon or splash of white wine

Prepare the mushrooms
Gently brush or wipe the mushrooms clean and tear larger clusters into bite-sized pieces. Oyster mushrooms are best torn rather than cut. -
Heat the pan
Heat a wide frying pan over medium-high heat and add the olive oil or butter. -
Cook the mushrooms
Add the mushrooms in a single layer. Let them cook undisturbed for 2–3 minutes to develop golden edges before stirring. -
Add garlic & thyme
Reduce heat slightly, add the sliced garlic and thyme, and cook for another 1–2 minutes until fragrant. Avoid browning the garlic. -
Season & finish
Season with salt and pepper to taste. Finish with a squeeze of lemon or a small splash of white wine if desired. -
Serve immediately
